The spring waters of which Panzo is rich, supplied Assisi since ancient times. Probably, the ancient Roman settlement and the construction of the monastery are due to the water proximity.

Both ancient documents and the techniques of construction lead to place in the classical era the origin of the aqueduct called "Panzo di sopra" and which is probably the oldest source of water supply from outside the city of Assisi. The water is distributed, as used by the Romans, through tunnels dug into the rock that are still partially visible today.

The water is of the highest purity.
