THE OLIVE GROVE
And its extra virgin organic oil
Our olive groves are located on the slopes of Mount Subasio, at the eastern end of the city of Assisi, within the Assisi-Spoleto olive belt, FAO's world-class agricultural heritage and millenary culture heritage.
At an altitude between 400 and 600 meters, on a karst and gravelly ground, the 15 hectares of organic olive trees are exposed to the sun until sunset.

The olives of mixed quality among moraiolo, leccino and frantoio, as well as some centuries-old autochthonous varieties (vocio and gnevolo), are harvested in October-November with every care not to damage the individual fruits and obtain an intact and fragrant oil.
The olives are taken to the oil mill and milled every evening using only mechanical procedures, to obtain an oil of a higher category. The oil is stored in our warehouse in stainless steel tanks and periodically decantings are made to remove the olive oil deposits that would defect the oil itself.
Our standard packaging includes 100ml, 250ml, 500ml, 750ml glass bottles as well as 2lt tins.
